Beef shank


The cost of good cuts of organic meat in France is nearly double that of normal mass market meat. A way to enjoy such good quality meat without spending too much is to buy the cuts that need long cooking, like beef cheek and beef shank - the parts with tendon (金錢腱). 
1. Cover a piece of beef shank with water, add 5 tbsp soya sauce, 1 tbsp miso paste, 3 star anis, 3 cloves, a few thick slices of ginger, 2 tbsp brown sugar, a small handful of whole black pepper corns. Bring to boil then simmer for 4 hours.
2. Take beef shank out of cooking pot, sieve out spices and reduce liquid into a thick sauce. Cut beef shank into thick slices, serve with sauce.
