Went to a new hiking trail famous for the 3 consecutive waterfalls, one longer than the other
The hike is not long, but the path is continuous uphill, natural with uneven big stone steps, quite hard work to reach the top. Lucky that the weather has been dry hence the path not slippery. The view of the 3 waterfalls and the blue green pools are well worth the effort.
More than a week of clear blue sky bright sunny days, the night sky has been equally clear with crescent moon and lots of stars. Time to wrap up to enjoy roof top barbecue sausage night with neighbours. The metal ‘stove’ was a retired wok from a restaurant kitchen, close to 1m in diameter!
看了由三位建築師辦的水彩和攝影展覽，以風景和建築物為主題。
水彩畫中，有不少碼頭、避風塘小艇、渡輪、小島等水天船風光。
最喜歡是這幾幅，民以食為天外，描寫庶民生活點滴，生動活潑，非光為習畫而找題材。

This time back to Hong Kong, noticed that the trees, shrubs have all grown very tall and bushy, very often covering the view, but they do offer more shade for hikers.
Saw a few plants with beautiful big flower or special leaves, their names are easy to remember: Fried egg tree, Cathedral Bell plant.
終於下降至單位數字的溫度，剛巧愛爾蘭回暖有十幾度，於是可以反過來向當地友人呻冷。
但天晴好猛太陽，坐在沒有暖氣向西北的家中好冷，出去行山就一流，行上行落不流汗。
聖誕大餐試菜，三種方法煮大蝦，牛油青檸葉五分鐘焗開邊蝦、連殼豉油蔥爆炒，和鹹蛋黃蝦球。
最重味是第三碟，可惜鹹蛋黃味多過蝦味。
第二碟若果蝦的粗幼不同，容易有不熟或過熟情況，且好多油煙。
覺得第一碟最清香嫩滑有蝦味，且簡單易做。
Thinking of a light dessert, so opt for this more fruit than cake format.
1. Make a sponge cake, cut into thin layers.
2. Bake pineapple at 180˚C until reduced to half in size. Cut green apple into cubes and cook until soft, mix in pineapple.
3. Assemble pineapple and apple mixture in between 2 layers of sponge.
上山頂看風景，是喜歡的行山徑之一，海景、密集高樓大廈和遠處山巒起伏，都有特色。
已經多年未乘䌫車，因為以前都會有條長長人龍。今回下山，沒有人龍，車亦未滿，換上了瑞士䌫車，首卡觀光用玻璃窗多，亦竟然只有六位乘客。
看到那車軌往下消失，似記憶中的過山車，短短數分鐘車程，覺得精彩萬分，飽覽城市風光。

1. Break pomelo flesh into bite size pieces.
2. Roast nuts (used pecan here) and break into pieces.
3. Use herbs like coriander or kaffir lime leaves and/or bell pepper cubes, cherry tomato for colour.
4. Make a sauce of lime juice, Thai red curry paste, salt and sugar.
5. Mix all the ingredients together
just before
serving.
The fish monger said that this Mayau fish is so fresh and fatty that it is suitable to eat as sashimi. The easiest is to cut from the tail half, not need to deal with the belly inside sken.
Sprinkled with a little salt, the fatty flesh has a mild nutty flavour and a fantastic texture.

During weekend, a restaurant serves some typical Hakka dishes, including clay oven roasted chicken. Other stores sells traditional sticky rice desert and a cafe serving simple dishes.
A pleasant way to spend a day, in beautiful environment, learn some history, and some decent food and drink.
It is a clear day with some wind, time to hike up the hill, to one of my favorite route in Sai Kung. It is still too hot for me, very sweaty on the way up, but the view is well worth the effort.
