Our small vineyard planted 4 years ago produced a small quantity of grapes (Tannat & Cabernet Sauvignon) this year, enough to make a small batch of red wine.

Followed the Lunar Calendar for the best day to collect fruit, 4 of us started working from 10am, cutting off bunches and sorting out bad grapes among them.

Back to the barn to remove stems from  the grapes, pour into the grinder to crack the grapes, add neutral wine yeast to kick start fermentation, got around 70L of grapes.

Plan to have a month long fermentation to extract maximum colour and flavor from the skin of grapes.

Fabulous intense tomato flavor using semi-dried tomatoes to make  bruschetta, I have many portions of these semi-dried tomatoes in the freezer for use over winter months.

Finally the normal September fabulous windless evenings are back, great for alfresco dinner.

2. Pizza with green pepper, mackerel, semi-dried tomato and kaffir lime - bake pizza with pepper, seasoned with salt and olive oil, first, add mackerel and tomato for a second baking, sprinkle finely cut kaffir lime leaves before serving.

3. Pizza with leek, blood sausage, apple and carrot - spread pizza dough with tomato paste, add leek, seasoned with salt and olive oil, bake until hard, add remaining ingredients for a second baking.

I like the taste of Cantonese style roast ribs, succulent meat with a rich seasoning. I bake these ribs on top of a bed of root vegetables to absorb oil and seasoning during cooking.

1. Prepare seasoning with 1tbsp dark miso paste, 1/2 tbsp mustard, 1/2 tbsp sour plum paste, 1 tbsp liqueur, 1tbsp brown sugar and some 5-spices powder. Rub ribs all over and rest for 1/2 an hour before cooking.

2. Cut pumpkin and parsnip into cubes, bake at 200˚C for 10 minutes, place ribs on top, bake for another 15 minutes, then rest in oven with door ajar for another 5 minutes.

Sometimes I like a touch of Asian flavor, so I though of preparing this pork dish with some tiny dry shrimp to add an unique flavor. The pork shrimp mixture is steamed on top of baked pumpkin and parsnip, any juice will be absorbed by the root vegetables.

1. Cut pumpkin and parsnip into cubes, place in baking dish, bake at 180˚C for 20 minutes.

2. Warm a cup of tiny dry shrimp in oil to bring the fragrance out, add to pork mixture.

3. Cut pork into bite size pieces, carrots, green pepper into small slices, kaffir lime leave into fine strips, season with salt, white pepper, wine and cornstarch.
4. When root vegetables are cooked, put pork mixture on top loosely, steam until cooked, around 15 minutes.

Grab the opportunity to go out for a walk along the coast near Hendaye, next to the Spanish border.

Lamb stew Rogan Josh style


 
I have finished all the easy to cook parts of the half lambs that was purchased early this year, now left with parts like shank, neck and brisket that needs longer cooking. So I stew them together in a curry sauce modified from Madhur Jeffrey's Rogan Josh recipe.

a. 1cinnamon stick, 3 bay leaves, 10 cardamons, 10 peppercorns, 5 cloves,
b. 1 large onion cut into small pieces
c. 1 head of garlic and 1 inch of ginger blended finely with 4 tbsp water
d. 2 tsp of cumin powder, 1 tsp of coriander powder, 4 tsp of paprika, as much chili powder as you like
e. 1 cup of coconut cream, 3 tbsp of nut paste to enrich and thicken (peanut/hazelnut etc)

 

1. Place lamb pieces in baking dish, bake at 220˚C for 15 minutes to warm through and brown slightly. 
2. At medium heat in a pan with 2tbsp olive oil, warm dry spices a, for a few seconds until peppercorns start to pop.
3. Add onion and cook gently until golden.
4. Add garlic ginger water, mix well for 1 minute.
5. Add spice powder d, mix well, lastly add coconut cream and nut paste, this will be the final quantity of sauce at the end of cooking, season with salt.

6. Then add 2 cups of water and bring to boil, pour on to lamb in baking dish.
7. Bake at 130˚C until meat is tender and sauce reduced to the quantity at step 5, around 2.5 hours, turn over lamb pieces every half hour.
8. Sprinkle finely cut kaffir lime leaves on top before serving.

I have made so many dry tomatoes this summer I could use them very generously, even in bread. These homemade dry tomatoes are beautifully bright red even after drying and baking, with a good sweetness and mildly sour.

Zucchini with tomato and anchovy

Found a XL size zucchini hiding under the leaves, thought of using it as a base for a tapas style starter.

1. Cut zucchini into 1 cm thick slices, bake at 200˚C until soft, around 20 minutes.
2. Chop coarsely semi-dry tomato and anchovy, add a handful of mix green like parsley and rocket, season with black pepper and olive oil, mix well.
3. Place a spoon of tomato mixture  on top of zucchini slice.

Also have good harvest of parsnip, mature a month earlier than previous years.

Even sweet potatoes are flowering now, beautiful pale purple trumpet flowers, start to wonder when to test dig to see if tubers are ready or not.

It is cooling down very fast with un-seasonal heavy rain in September, time to have some chili food to warm the body.

1. Cut pork into pieces, season with salt, white pepper and olive oil.
2. Remove skin and cut apple into slices, cut red chili and green pepper into pieces.
3. Before searing pork, mix in a tbsp of brown sugar, this will help to add a browned colour faster without overcooking the meat.
4. Warm oil with chili first before cooking pork, when nearly done, add apple and peppers, mix well, then a handful of fresh basil before serving.

I have a fond memory of a lamb bun eaten in Cairo many years ago, rich combination of flavor of charred lamb, cumin, juicy tomato, fresh basil, wrapped in soft white bun. Every now and then I will use similar combination to make a dish.

1. Cut lamb leg meat into cubes, season with salt, soy sauce, cumin, pepper and olive oil.
2. Cut eggplant into cubes, steam to cook, around 20 minutes.
3. Sear lamb meat until the corners are browned, remove from heat, add semi-dry tomatoes, cut into cubes, and a handful of fresh basil leaves, stir to mix well.
4. While hot, pour the meat mixture onto eggplant to absorb all the juice.

With a lot of small size pumpkins Baby Bear matured, I have to think of different ways to use them. This is a fun way to present pumpkin, using it as a base, instead of pie, to make quiche.

1. Cut pumpkin into halves horizontally, remove seeds and bake at 200˚C for 20 minutes.

2. Use the pumpkin as the container to hold your normal quiche ingredients. In this one, I used apple, cooked green beans, semi-dried tomato, season with salt and curry powder, then pour in egg mixed with sour cream (an egg with 125ml sour cream, season with salt & pepper), sprinkle grated Gruyere on top.

3. Bake at 170˚C until egg mixture set, around 20 minutes.

Wild rose hip



This is the wild rose that I have grown from seeds collected in Norway a couple years ago, they flowered and bear fruits, rose hips giant ones.

I like this wild rose variety because the leaves are so fresh green and dense, flower profusely, with lovely fragrance, and bears beautiful huge fruit with soft flesh, which could be made into rose hip jam, if there is enough quantity, I am working on this.

Hike to Cirque de Lescun


Cirque de Lescun

A super clear day, sunny but with cool wind, perfect for hiking, chosen an 1.5 hour gentle hike from 1400m to 1700m in the Pyrenees to see Cirque de Lescun, a circle of high mountains. 
Sheep are grazing there during summer to enjoy the cooler weather and juicy green grass.

Cider making round 2



 
Friends have harvested so many apples and pears that we need to have a second round of cider making to use up everybody's excess crop.
