Sea cucumber


While swimming in Rovinj, I couldn't help noticing how clear the water was, with shoals of fish swimming around. On the seabed were sea urchins and sea cucumbers. The sea urchins were very small, but I was tempted to try to cook the sea cucumbers......


1. Split open sea cucumber, remove guts, put in a pan of cold water, bring to boil for a couple of minutes. Change water, bring to boil again, then switch off the heat and let the sea cucumber cool down in the water.

2. Repeat this process 4 to 5 times, until it is soft enough to eat. Slice thinly, serve in soup or eat with wasabi & soya sauce.



Of course, after all that, it has no taste, we ate it for its collagen, its high mineral content (zinc, magnesium, calcium etc).
