Tomato sauce



In my garden, all the various varieties of tomato plants are ripening together, they are loaded with all sorts of size, shapes and colours of tomatoes. It is impossible to consume them all fresh, so the only way is to turn the excess into tomato sauces for storage.

1. Cut tomatoes into 1 inch pieces, season with salt, pepper, cloves and drizzle with olive oil.
2. Bake at 180˚C in the oven, turn and squash the tomatoes every 30 to 60minutes, until very thick.
3. When cool, pass it through a sieve.
4. store in sealed jars in the freezer.
