Apple & raisin pudding


Hot pudding is a delightful dessert in winter. It is very easy to make and we can vary the fruit or flavouring easily.
1. Cut apples into small cubes, cook with a handful of raisins, slices of ginger, some brown sugar and Sherry until it is soft, about 15 minutes, leave to cool down.

2. Sieve into a large bowl 150gm flour and 1tbsp of baking powder, mix with 75gm butter using rubbing method.

3. Whisk 3 eggs with 50gm brown sugar,  add in around 50gm of liquid from the cooked apple, or any juice.

4. Grease a large enough bowl with melted butter, put cooked apple and any juice left, in the bottom.

5. Combine quickly egg mixture with the rubbed flour/butter, pour gently over the cooked apple, cover with foil and steam for 2 hours for a shallow dish, or 3 to 4 hours for a deep dish. The longer it cooks, the texture becomes softer and more sticky.  Serve up side down.
