Spring cabbage, being grown in cold winter
months is sweeter than those grown in summer. I like particularly this conical
variety, sweet and crisp, great to use as raw salad.
1. Cut cabbage as fine as possible, and an
inch of ginger also cut as fine as possible, add a handful of dried fruit, like
raisin, fig or goji berry.
2. Marinate with around 0.8% it's weight of
salt, juice of one or two lemon, mix well and rest for at least a few hours for
longer.
3. Before serving, mix with olive oil and a
handful of walnut.
