Baked winter vegetable cheese



It is getting cold, a warming and filling dish is well appreciated. This is similar to grilled mash potato cheese, but a much healthier version using winter vegetables like parsnip, sweet potato and butternut squash.

1. Cook thinly sliced red onion on medium heat with olive oil and butter until golden.
2. Add in all vegetables cut into small cubes, cover with water, season with salt, pepper and chili, simmer until soft, with most liquid evaporated.
3. Puree the mixture and pour into baking dish, sprinkle on top grated 2/3 mature Cheddar cheese and 1/3 parmesan cheese. Grill until golden.
