fast braised fish |
Got this half kilo silvery fish similar to
Sea bream, used the fast braised technique (in the last post), adding 2/3 glass
of water and cook at high heat for around 3 minutes and rest for at least 5
minutes. The flesh is again juicy
and tender.
The result is equally good for big and small fish, basically this
is a fast way to cook fish, and could rest in the hot pan for a while without
changing the texture much, very useful when inviting friends for dinner
