Balinese sticky rice flour cake with palm sugar sauce

There is this street food called Terang Bulan in the Sidemen area of Bali that has a simple but unique texture and flavor, a Bali flavor. Eventually figured out that it is a pancake made with sticky rice flour, the sauce inside is simply palm sugar cooked in coconut milk and freshly grated coconut, simple and delicious.
It is quite hard to make many pancakes to serve at a dinner party, so decided to bake it as a cake instead.

Sticky rice flour cake
(any of your favorite pancake mix recipe, substitute wheat flour with sticky rice flour to give that chewy texture)

115gm coconut oil
50 sugar
2 eggs

85gm coconut milk

175 sticky rice flour
2gm baking powder
pinch of salt

1. Whisk the first 3 ingredients until foamy, add in coconut milk, then fold in flour, baking powder and salt.
2. Bake in a paper lined tin at 170˚C for 25 minutes

1. Melt palm sugar in coconut milk to your desired sweetness.
2. Grate fresh coconut.
