Blackcurrant |
Harvested 3 kg of berries from 4 bushes, an
average year, setting of fruit was not good during the very wet spring. I made blackcurrant
jam, using the 3 times cooking method.

1. Mix berries with a big pinch of salt,
honey or brown sugar, bring to boil, stirring all
the time. Remove from heat and cover with lid to cool down slowly.
2. Re-boil with stirring, and cool down, repeat
a third time, breaking the berries that are less ripe and stay whole on the
top. Adjust sweetness before bottling.
