Lamb tenderloin is easy to cook and serve,
but is mild in flavor. I used thyme and lemon juice to make a light sauce.
1. Season lamb with salt and pepper.

2. On a baking paper, place fresh thyme
below and on top of tenderloin. Squeeze juice of half a lemon and zest on top.
Wrap up the top of the baking paper but leave both ends open to allow steam to
escape.

3. Bake at 200˚C until pink in the middle,
around 10 minutes and rest for 5 more minutes.
