When there are cars parked at odd places in
the countryside, where there is no house around, you know that it is time to
look for cepes.
Spent a whole morning searching in the
mountain behind a friend's house where he knows the spots to look for. His
whole family is out everyday to get whatever that has popped up. Got 2 kg.

Then went to the nearby hill for a stroll,
easily got 3kg within an hour, it is all about timing.

1. Rub clean and cut away sandy bottom, cut
into 1/2 cm slices.
2. In a frying pan with olive oil, sear at
medium heat until edges slightly golden, sprinkle salt on top.

A simple way to preserve them is to take
them out half way in the cooking, place on baking paper, roll up and freeze.
