Apricot in grappa (or brandy)


When ready, the fruit is good to use in dessert and the liqueur to sip slowly at night.
I tried 2 recipes, one using fresh apricots and the other used dried ones.

1. Fresh apricot in grappa- cut apricots into halves, remove stone, add honey or sugar, mix well, after a couple of hours liquid will ooze out. Place apricot and juice into a preserving jar to 2/3 height, fill up will grappa or brandy, stir gently to mix. Keep in a cool dark place for a few months. The amount of honey or sugar used is such that the resulting alcoholic liquid is sweet enough to your taste.

2. Dried apricot in grappa- place apricot in preserving jar, mix grappa with same volume of water, or apricot juice (from adding sugar to fresh apricot), add enough honey or sugar to your taste. Add spices like cinnamon, cloves, ginger. Fill the jar with this mixture. Keep in a cool dark place for a few months.
