I make long boiled soup regularly, always
with some pork meat/bone and other ingredients. The pork meat ended up overcooked
and bland, not flavorful to eat and wasteful to throw away. I much rather reuse
it to make another dish, to turn it into something enjoyable to eat.

1. Remove meat from bones and season with
soy sauce, brown sugar and rice wine.
2. Cut onion into thin slices, sweat until
soft.
3. Add freshly grounded Sichuan pepper,
stir-fry until fragrant, add marinated pork, mix well and let sauce reduce.
Throw in a handful of fresh coriander leaves just before serving.
