Roast and braise duck in orange tomato sauce

Other than roasting duck, it is also very tasty to braise it in a sauce. A bit more work as it is still necessary to roast the duck first to render out some fat from under the skin, otherwise it will be too fatty to eat.
1. Remove wishbone, season duck with salt, pepper and 5 spices powder, for at least half a day.

2. Turbo grill at 200˚C to render out fat, for around 20 minutes.
3. Sweat onion, make a sauce with orange juice, tomato, Grandmanier liqueur, salt, spices like star anis, clove, ginger and brown sugar.
4. Submerge duck in the sauce, bake at 180˚C for 20 minutes, turnover midway.
