I always wonder why traditional English pudding, even with simple sponge recipe, needs to be steamed for 2 hours. While there is time now, made one to see the difference. Yes it is different, cake is tender and moist compared with baked ones.
100gm apricots soften in lemon juice or liqueur
2 eggs
50gm butter
100gm flour
30gm sugar
juice and zest of a lemon
1/2 teaspoon baking powder
1 pinch salt
1. Butter a bowl, place soaked apricot at the bottom.
2. Mix the remaining ingredients into a thin batter, pour on top of apricot, there should be at least an inch below rim, cover the top with a plate.
3. Steam for 2 hours.
