With the steam oven, I tried to make steamed pudding again, but use a shallow baking dish instead, faster cooking. The mix is spelt and almond, the result is quite stodgy, interesting in its own way, but probably not everyone like this texture.  

 

2 eggs

30gm sugar

pinch of salt

300ml coconut milk

juice and zest of 2 lemons

100gm spelt flour

100gm almond flour

1tsp baking soda

dry apricot, cut into pieces

 

1. Whisk eggs with sugar and salt, mix in coconut milk and lemon, then sieved flour and baking soda, and lastly apricot, mix well.

2. Pour into buttered baking dish, cover with metal tray to stop steam water dripping in. Steam for 1 hours.
