My favorite cut, being dark red and
flavorful. Often I cook it in sauce like Cha Siu, but actually simply seared is
tasty enough, able to enjoy the real pork taste .
1. Season pork shoulder steak with salt and pepper for a day.
2. Cut into half inch slices, sear all sides golden, rest on the hot pan off heat until middle cooked through, a minute or two.
