Very good harvest of raspberries, the bushes are covered by a net, hence zero lost to birds. If unprotected, like my few gooseberry bushes, most fruits are being eaten.
Other than turning into coulis, I also make simple desserts:
Raspberry cobblers
-Mix raspberries with a tbsp of cornstarch (to thicken after cooking) in a baking dish.
-Mix almond flour with egg, milk and sugar to form a thick paste. Place spoonfuls on top of raspberry for an uneven finish.
-Bake at 180˚C until set, around 30 minutes.
Raspberry coconut bake
For a less heavy dessert, place raspberries mixed with a tbsp cornstarch in a baking dish, mix desiccated coconut with brown sugar and cream to form a thick paste. Pour on top of raspberry. Bake at 200˚C until coconut turns golden, around 15 minutes.
