Smoked haddock with zucchini


1. Use a strip peeler to turn zucchini into thin strips, blanch in boiling water.
2. Warm 200gm tomato sauce, put 1 whole smoked haddock fillet inside, cook until the haddock can be flaked into pieces, mix with sauce.
3. Serve haddock and tomato sauce on top of zucchini, no need to add any seasoning, the salt and smoky flavour of haddock is rich enough.
