Chorizo and tofu


Recently in the organic shop, I found this chorizo (Spanish spicy sausage) made with only organic pork and spices, no other chemical additives. It has become the favorite food item of the month.
1. Cut medium hard tofu into cubes and soak in hot water for 15 minutes to warm it up.
2. Cut chorizo into cubes, sear in a pan then add a little balsamic vinegar and brown sugar to cut the grease and soften the salty taste.
3. Drain tofu, ladle chorizo and juice on top.
