Mussels and pine needle flambé


This was a dish that I had eaten many years ago on the Atlantic coast. It was spectacular to watch the pine needles burning on top of mussels right on the table. The cooked mussels have a faint pine fragrance.
1. On a thick wooden board, put 4 mussels in the form of a cross, curve edge facing down, so that the shells hinge joint is facing up, (this will minimise ash going inside).
2. Continue adding more mussels in between each other, in an enlarging pattern.
3. Pile dry pine needles on top of  the mussels, set fire to the pine needles, the heat generated is enough to cook the mussels in just 3 or 4 minutes.
