I got a whole cow
tongue from an organic farmer and have been doing a bit of research on how to
prepare it. The family traditional way is to boil it for 2-3 hours in plain
water, remove the thick white skin, slice it and serve with soya sauce.
On the web, I found
this grill method for cooking the back half of the tongue.
1. Use a pointy sharp
knife to remove all the tough white skin while raw. Cut off the back half and reserve
the other parts for stew or soup.
2. Cut the back half
into thick slices, season with salt and black pepper, rest for at least an
hour.
3. Dry sear on a hot
pan or grill until slightly brown, around 2 minutes each sides.
The meat is slightly
crunchy and it is indeed a simple and tasty way to cook that part of the
tongue.
