It was great fun to create toppings for pizza,
and that the taste turned out to be good.
1. Bruschetta - cut peeled tomatoes into
cubes, marinate with fresh basil, salt, pepper and olive oil. Spoon on to baked
pizza base that had olive oil brushed on.
2. Fennel & pine nut - cut fennel into
thin segments, marinate sliced mushroom in salt and olive oil, roast pine nut.
Spread tomato paste on rolled out pizza dough, place fennel and mushroom on
top, sprinkle grated Gruyere cheese. After baking, add a handful of roasted
pine nuts on top.
3. Air dried beef & rocket - spread
tomato paste on rolled out pizza dough, arrange marinated sliced mushroom on
top, sprinkle grated Gruyere cheese. When baked, add shredded air dried beef
and a handful of rocket.
4. Curry, fig & chorizo - spread tomato
paste on rolled out pizza dough, sprinkle curry powder, place rings of green
bell pepper, slices of semi dried fig, chorizo on top and sprinkle grated
Gruyere cheese. Add a heaped spoonful of roasted desiccated coconut after
baking.
