Peach cucumber chorizo salad


Fresh, sweet and spicy, a tasty and juicy salad.
1. Cut chorizo into thin slices, marinate in vinegar and brown sugar for an hour to soften the texture.
2. Cut cucumber into slices, marinate with salt and pepper for half an hour, drain liquid and mix with olive oil.
3. Arrange slices of peach on a plate, place cucumber and chorizo on top. Add a couple spoonfuls of vinegar marinade and some basil before serving.
