It is possible to make noodle by hand
without machine, a little bit of effort and time, and you will have fresh
noodle any time you like.
1. Mix 150 gm flour with around 80gm water (55-60%
weight of flour) and 1tbsp oil, knead for 2 minutes, this amount is enough for
making 2 bowls.

2. Flour the table well, roll the dough to
a big thin sheet slowly, sprinkle flour on both surfaces when needed to stop
sticking, until around 1mm thick.

3. Fold to a roll then cut into thin
strips, sprinkle flour and loosen the fresh noodle. Remember the noodle will
double in size and thickness when cooked.
4. Boil a pot of water with a big pinch of
salt, add noodle and cook until soft. Remove noodle into serving bowls, pour in
stock and other ingredients.
