Roast vegetable chips


A colourful dish pleasing to the eyes and fill the stomach, and full of nutrients too. For me, far better than eating rice or pasta.

1. Cut various root vegetable, purple potato, butternut squash, carrot, into fat chips.
2. In a big bowl, drizzle olive oil on vegetable, mix to coat every chip with oil.
3. Bake at 200˚C until cooked through and corners slightly golden, around 40 minutes.
