I found very fresh squid in the market, the
spots on the back blinked on contact. Coupled with mix mushrooms and coriander,
it is a very tasty dish.
1. Clean squids, score inside surface with
fine vertical and horizonal lines, cut long pieces at 45˚.
2. Blanch squid strips in boiling water with a
spoonful of salt until curl up and turned white, just a few seconds, they will curl up into a
beautiful spiral shape.
3. Heat oil with a few pieces of ginger,
then sweat julienne carrot, when soft, add washed mix mushrooms. Season with
salt and white pepper, stir frequently until mushrooms turned soft, water will come out.
4. Add blanched squid and a good handful of washed coriander.
