Learned this very creative method of making preserved lemon from Ideas in Food. By using freeze & defrost process, the peel soften instantly, bitter taste released, and absorbed its own fragrant juice. The fact is lemon peel has lots more nutrients than its juice, so its great to have a simple and delicious way to enjoy it. The level of salt used is low, the preserve is mildly salty with fresh lemon taste from the juice, can easily eat a lot without problem.

1. Cut organic lemon into 3mm thin slices, in a bowl, mix with 1.2% its weight each of salt and brown sugar, and chili flakes (optional).

2. Place in freezer to freeze solid, then keep in fridge to defrost, stir and mix well.
3. Repeat the same freeze and defrost process.

4. Pour away all the bitter salty sour juice, cover with similar amount of olive oil, repeat freeze and defrost process.
5. Pack in a jar cover with olive oil, will keep in fridge for maximum a month.

Some simple ways to enjoy preserved lemon:
1. In salad

3. Cut into small cubes and mix with nut paste to make a sauce for vegetable.
