Date coconut roll


The combination of tropical produce, date, coconut and rum worked wonder in this easy dessert, what a rich strong flavor.
1. Cut date into strips, marinade in rum, mix in coconut paste and a pinch of salt.

2. Roll out bread dough into a thin square, spread date mixture on top, fold up the dough loosely, let it rise for a short while.
3. Bake at 200˚C until cooked, around 15 minutes.
