Learned this recipe in a cooking school in
Istanbul, using tomato sauce and garlic to cook bean slowly, I modified by
baking in the oven and adding soy sauce. It is a good way to deal with a big harvest of beans, easily stored frozen and reheat to serve.
1. Break long beans by hand into roughly
5cm length, cut garlic into slices, wash a handful of oregano, mix in
thick tomato paste, season lightly with salt and pepper.
2. Preheat oven to 200˚C, pour bean mixture
into baking tray, bake at 150˚C for an hour, stirring every 15 minutes.
3. While hot from the oven, add soy sauce
and olive oil to enrich the sauce.
