Green tomato salsa


I have a tomato variety called Raison Vert, the flesh is green and soft when ripen.
ripe fruits have yellow skin
green when skin removed
I use it to make a simple salsa to go with smoked herring/kipper.

1. Remove skin of tomato, cut into small cubes, keeping the liquid and seeds.

2. Add chopped up chives, season with salt and pepper, thicken with Greek yogurt or sour cream.
