Serving colourful vegetable in a glass is a
great presentation method, drawing attention and hence appetite.
1. Wrap beetroots in aluminium foil and
bake at 180˚C until soft to touch, around 40-50 minutes depending on size.
2. Peel off skin and cut
into small cubes, season with soy sauce, salt and black pepper.
3. Peel and cut yellow or white sweet potatoes into
cubes, add some water and cook until soft and most water evaporated, then
roughly mash up.
4. In a glass, carefully place spoonful of
beetroot and sweet potato mash alternately without mixing them for colour
effect. Add some herbs or yellow bell pepper on top for garnish.
