Chocolate lemon peel dumpling



CNY is round the corner, time to serve glutinous rice dumpling as dessert. This is an instant creation inspired by what is available at home.

To make 10 dumplings:
50gm dark chocolate
10gm coconut oil
sweeten with honey to your taste
heaped tbsp lemon peel ginger jam (post below)
pinch of salt and chili pepper (optional)

1. Melt chocolate and coconut oil on warm water bath, mix in the remaining ingredients.

2. Stir and cool down to nearly set, divide into 10 portions and spoon onto baking paper, then roughly shape into round balls.
3. Mix 80gm glutinous rice flour with around 70gm cold water, knead well to form shiny dough. 

4. Take a 2cm diameter portion of dough, roll between the palms o form round ball. Press a hole in the middle and insert filling, enclose the filling and roll to perfect round ball. 
5. Put into a pot of boiling water, simmer until float to the top and cook for another minute more.
