Bought 4 organic lemons that have very
thick skin and not that much juice. The best way to fully enjoy them is to turn
the whole fruit into jam. It is said that there are more vitamins and minerals
in the peel than in the juice.
1. Cut the whole fruit into thin slices,
add fresh ginger cut into tiny cubes, marinate in a little salt and a lot of
brown sugar (at least 50% weight of fruit) for a day. The peel will become soft and juice comes out, taste and adjust seasoning.
2. Bring to boil and simmer for 5 minutes,
leave in the pot to cool down. Check that it is soft enough to your liking,
otherwise repeat process. Less cooking time means less nutrients are destroyed, and the jam is sweet sour with a hint of bitterness.
