The preferred
cut here is Wagyu fillet, not as fatty as other cuts, so there is a richer meat
taste. They have a wonderful technique to slow cook beef, quick sear on hot
plate at 180˚C for a few seconds then rest on the rack covered with a lid,
alternate a few times, the result is a super juicy, tender piece of beef, a lot
to learn for future bbq.
