Spaghetti with preserved lemon orange, and garlic


Using a lot of fresh garlic raw now, because they are milder. I find it easier to manage the flavor by mixing raw garlic with lemon and olive oil. Preserved lemon orange peel lends a nice flavor and texture to the dish.

1. Mince garlic with a grater, mix with olive oil, lemon juice and salt.  
2. Cook spaghetti (100g pasta flour with 1egg, roll thin by hand or machine and cut), while hot, and in garlic mixture and preserved lemon orange.
