Wild sea salmon

Saw this filet in the market, it is rare to find wild salmon these days, there are less obvious layers of fat. I salted it with 1% its weight of salt and of sugar for half a day.
Simply cooked at med temperature, the flesh is tender with a bite in it.

Also hot smoked with apple wood to have different taste.
