The half lamb I purchased recently came with its offal, it is the first time I cook and eat lamb's lung. Could not say that it is tasty, it has a unique texture, and is sort of a carrier of sauce, so making a tasty sauce is the most important.

1. Cut the lung into big cubes, simmer in water with slices of ginger and lots of white pepper for half an hour.

2. Cut the cooked lung into thin slices for easy eating.
3. Sweat onion until golden, add lung slices and brown both sides.
4. Season with soy sauce, mustard and sour cream, add a handful of coriander leaves just before serving.
