Lamb steak in apple and bell pepper sauce


Given a big bag of Bramley apples and have been finding ways to use them up. It is used in this lamb dish to add a tangy taste to the sauce. 
 
Lamb steak in apple and bell pepper sauce

1. Season lamb leg steaks with salt and pepper for half an hour.
2. Sweat red bell pepper in half olive oil and half butter until soft, remove from pan.
3. Sear lamb steaks and apple slices in the oil, turn over when golden.
4. Add sherry to deglace pan, add pepper, some water, season with soy sauce, stir in a handful of coriander leaves just before serving.
