Long steamed cake is a
very unique British tradition, I love the aroma, the extra soft and moist
texture.
1. Cut 2 green sour
apples into cubes, cook with 60gm sherry, 60gm butter, a pinch of salt and brown
sugar (to your taste) until soft, place at the bottom of a buttered bowl.

2. Mix together 3
eggs, 180 butter, 60gm dark brown sugar, 180 gm flour, 5 gm baking powder and
pinch of salt. Gently place on top of cooled apple mesh, cover the top with buttered
baking paper and aluminium foil, secure with string.
3. Steam for 2 hours.

4. Chop a handful of
dates, cook with 200 gm water, slices of ginger, big pinch of salt. When soft,
blend into a pulp.
5. Cut 3 green apples
into 1cm cube, add to boiling hot date puree, cool down slowly.

6. Turn the pudding
upside down on a plate, serve with generous amount of ginger date apple sauce.
