Rack of lamb with bell pepper crust |
I used red, green bell pepper and sesame to
make this soft crust for the rack of lamb, mainly for moisture and colour
effect.
1. Season rack of lamb with salt and white
pepper overnight.

2. Sear the bone and meat sides until
lightly golden.
3. Chop red and green bell peppers into
small pieces, cook in some oil. Season with salt and a little cumin, stir-fry until very
soft and dry, mix in a couple tbsp sesame seed.

4. Pile bell pepper mixture on top of rack
of lamb, bake at 190˚C for 13 minutes, for a pink in the middle
effect.
