Apricot chocolate trifle |
With some left over chocolate sponge cake
after making a black forest cake, I used some apricot to make this easy to
please dessert, apricot and chocolate compliment each other very well, on colour and taste.

1. Cut apricot into quarters, cook with a
little sugar and lemon zest, when enough juice come out to cover all the fruit
and boiling, removing from heat and let it cool down slowly.

2. In a dish, place some apricot compote at
the bottom, add pieces of chocolate sponge cake on top, repeat once more.
3. Mix equal volume of yogurt with sour
cream, put spoonfuls on top of cake, add remaining apricot compote in between.
Leave for a few hours for the sponge cake to soak up juice before serving.
