Goat cheese goes well with something sweet,
while beetroot could use a savory creamy sauce, so they compliment each other well.
1. Wrap beetroot in aluminum foil and bake
at 180˚C until soft, around 40-60 minutes depending on size.
2. When cool, remove skin and cut into cubes, season with soy sauce and black pepper.
3. Slice green bean into long strips,
season with salt and olive oil.
4. Cut fresh goat cheese into cubes.
5. Place beetroot in baking dish, then
green bean around (for colour and texture), finally goat cheese in between. Bake
at 180˚ until goat cheese is lightly golden, around 15 minutes.
