Cucumber with garlic and yogurt |
A summery dish that is cooling to
eat.
1. Grate cucumber, season with 1% its
weight of salt, mix well and rest for an hour.
2. Squeeze most of the liquid out of
cucumber, add a crushed clove of garlic and 2 tbsp of yogurt (with live lactic
bacteria). Mix well and rest in room temperature for a few hours.This helps to make the garlic less pungent.
3. Before serving, add coriander and more yogurt to form a cool soup.
