Nutty kale crisps |
Kale, for me, is not a very tasty green
leaf vegetable, on top being tough needs long cooking. But I do like to turn
them into crisps, lovely to eat and a good snacks anytime.
1. Wash and dry around 30 pieces of kale
with stalk, the stalk will be too hard to eat, but great to hold the shape,
could also remove the stalk first.

2. Grind a big handful of walnut (or peanut
etc) with olive oil until a sloppy paste, season with salt, black pepper and curry powder
(optional).
3. Mix nut mixture with kale, massage
gently until nut is well spread all over kale and the leaves turned soft.

4. Spread out nutty kale leaves on baking
paper on oven racks, bake at 80˚C for 15 minutes, turn down to 60˚C until kale
dry and crisp, around 2 hours, open oven door every half hour to release steam.
