Aronia |
With a good harvest of many kilos of
aronia, I have to find ways to store them in different formats. The berry skin
has an astringent taste and is not that great to eat raw, but aronia is high on
antioxidant and anthocyanins, good health food.

1. Freezing - Wash and dry berries, put
them on baking paper in a tray that can go in the freezer, depending on height
of the tray can place a few layers of berries. Freeze hard, normally one day, then
keep them in bags. Kept this way, the berries do not stick together and you can
take out the quantity you need to use in the future.

3. Liqueur - Place aronia in preserving
jar, pour vodka (or other neutral alcohol) to cover, add brown sugar and a big pinch of salt to sweeten
the liqueur. Keep in cool dry place for minimum 6 months before consuming.
