Cherry tomato "raisin" with pesto sauce |
Interesting amuse-bouche, easy enough to
make, the semi dried cherry tomato is like a little bomb of sweet sour flavor, contrasts
well with a fragrant coarse pesto sauce.
1. Blanch and peel skin off cherry
tomatoes, dry in fruit-drier until they resemble giant raisins.
2. Place on spoon and put a little
coarse pesto sauce on top.
