Potato zucchini noodle with pesto sauce |
Made this for a potluck dinner at a friend's
home, always an interesting challenge to create something easy to transport, to
serve a lot of people, can eat cold, and use the vegetable that I have a lot in the garden.
1. Use julienne peeler to shred potato
and zucchini into noodle like thin strips. Season zucchini with salt and white
pepper, mix well, after an hour, squeeze out most liquid.

2. Mix together zucchini and potato
"noodle", take serving size amount and place on baking tray lined
with baking paper. Half steam bake
at 130˚C until potato is cooked, around 20 minutes.
3. Transfer "noodle" into serving dish, put cut up dried tomato for colour and flavor and also a tbsp of pesto sauce
on each portion.
